Spiced Gingerbread Cake

I first posted the recipe over on my Napa Farmhouse 1885 blog back in 2009. Some of my favorite food bloggers guest-hosted the site for a Thanksgiving roundup. My blogger friend Theresa Loe submitted this post. Since then, it has become one of my favorite cakes and I make it year round. The spicy ginger flavor is perfect for a blog about spicy food. Enjoy!

Holiday Spices Evoke Memories, By Theresa Loe

"They say that the sense of smell is closely tied to the memory portion of our brains. Various aromas can immediately take us back to recollections of our past. I’ve experienced the way a perfume will remind me of someone from long ago or how the aroma of certain foods reminds me of the kitchen from my childhood. 

When I smell the spicy aroma of ginger, it immediately makes me think of holiday preparations as a little girl helping my mother make gingerbread. Growing up, our kitchen was a hustle and bustle of activity for weeks before Thanksgiving (and all the way through Christmas). The whole house was filled with the wonderful aromas of ginger, cinnamon and allspice.
My mom loves to, bake and she passed that love on to me. As a little girl, I always had the important job of measuring these spices and stirring the ingredients when she was making something delicious. While other households only made pie, we were making gingerbread cake, gingerbread cookies, bread puddings and spicy pies with extra ginger and cinnamon. 

During these baking sessions, I learned many important culinary trade secrets. But more importantly, I built a closeness with my mother that I don’t think we could have forged any other way. Baking gave us common ground for intimate mother/daughter talks and I soon realized that it was those moments in time I cherish the most. As a kid, you think you will grow up to remember the movies, toys, and games played with friends. But in reality, it is the unplanned moments with loved ones that touch our hearts and remain as snapshots in our memories. Having a strong fragrance like ground ginger associated with those snapshots creates an even stronger spot in our memory banks. For this reason, I do a lot of baking with my own children. I’m hoping to create new memory snapshots. 

The close bonds my mother and I forged many years ago still exist between us today. No matter what differences we have had, we can always come together to share a recipe. It is no wonder that the smell of ginger reminds me of a warm, inviting kitchen filled with holiday sweets and my mother’s love! 

Although most people only associate ground ginger with gingerbread, there are many other 
wonderful ways to enjoy the spice. Below is a recipe for gingerbread cake that we like to make each year."

Gingerbread Cake 
This recipe is a spiced up version of traditional gingerbread cake. When you bake it, it fills your home with all the aromas of the holidays. 

½ cup (1 stick) butter, softened
½ cup hard-packed dark brown sugar
1 cup molasses
1 large egg
2 ½ cups flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. ground ginger
1 tsp. ground cinnamon
¼ tsp. salt
¼ tsp. ground cloves
¼ tsp. ground nutmeg
¼ tsp. ground coriander
1 cup boiling water
Whipped cream for garnish 

Preheat oven to 350 degrees F. In a large bowl, beat together butter, brown sugar, and molasses until creamy. Beat in the egg. In a separate bowl, combine flour, baking powder baking soda and spices. Mix well. To the butter mixture, add the flour mixture alternately with the water, stirring well until combined. Pour into a greased 8-inch square baking pan. Bake 35-40 minutes or until a toothpick comes out clean. Cool ten minutes before removing cake from pan. Set on wire rack to cool completely. Serve with whipped cream

Kahlua-Spice Brownies


Ok, I am a bit of a rebel this week. My assignment from Food Network was Holiday Cookies. And I did share a delicious almond-sugar cookie with pepitas and dried apricot recipe over on my Napa Farmhouse 1885 blog. But I have been making these delicious brownies all holiday season, and I just had to share. Besides, brownies work on as assorted cookie platter, right?


I copied the recipe out of a murder mystery book a long time ago. You know the ones where the protagonist is a caterer, or owns a bakery, or restaurant, or is somehow involved in cooking? And there are a number of recipes included? Well, this recipe came from one of those books. I made a copy of the recipe, but nowhere on the page is there a book or author name. Then I googled "Kahlua brownie recipes from murder mystery book" and found a number of authors have included a similar brownie in their books. But I cannot find this one. So, if any of you know the answer, please respond in the comments section so I can give the proper attribution.

I followed the original recipe pretty closely. I just added the spices because I like cinnamon and Allspice with Kahlua and added dark chocolate chips because...well, obviously more chocolate is a good thing. Enjoy and Happy Holidays!



Kahlua-Spice Brownies
(makes 2 dozen)

3/4 cup (1 1/2 sticks) unsalted butter
4 oz unsweetened baking chocolate
4 large eggs
2 cups granulated sugar
1/4 cup Kahlua
1 cup unbleached flour
1/4 cup white, whole wheat flour
1/2 teaspoon cinnamon
1/4 teaspoon Allspice powder
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup dark chocolate chips
1/2 teaspoon chopped pecans, toasted

Pre-heat oven to 350 degrees. Line a 9x12 inch rectangular baking pan with parchment paper. Grease the paper with butter and set aside.

Add the butter and baking chocolate to a medium-sized microwave-safe bowl. Heat in the microwave for 30 seconds. Remove and stir. Continue this process in 30-second increments until the butter and chocolate has melted. Stir until chocolate is glossy. Set aside to cool.

In the bowl of a mixer, add the eggs and sugar. Beat at low speed until combined and mixture in pale yellow. With machine running, add the Kahlua and the cooled chocolate mixture and mix until smooth. Add the flours, 1/4 cup at a time, the cinnamon, Allspice, baking powder and sea salt. Increase the speed to medium and process until just combined. Do not overmix. Stir in the chocolate chips and pecans.

Pour batter into prepared pan. Place in preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center of pan comes out clean. Rest pan on a wire rack until cool and then cut into squares. Delicious on their own...out of this world with salted caramel ice cream.

Spiced Pumpkin-Chocolate Chip Bars


I have been making these bars for 15 years. The original recipe came from Bon Appetit Magazine, and it was called Pumpkin-Chocolate Chip Loaf Cake. I liked the idea of baking this into bars instead of a loaf and topping with a drizzle of chocolate sauce. I have tweaked the recipe just a bit by swapping some of the white flour for white whole wheat, adjusting the spices and using coconut milk instead of regular whole milk.

We had a going away party last week for an employee at our local Habitat for Humanity affiliate, and the menu was potluck. Even though the weather was still warm during the day, the nights have a bit of a chill and, since it is fall, these bars came to mind. They were a hit; the four leftover bars were packed up for guests' breakfast the next day. Pumpkin and spices...welcome to fall.

My dog, Jasper, is very sad he could not have a pumpkin bar!


Spiced Pumpkin-Chocolate Chip Bars
adapted from Bon Appetit Magazine November 2000
(makes 20 bars)

3/4 cup white whole wheat flour
1 cup unbleached white flour
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon alum-free baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 stick unsalted butter, room temperature
1 1/4 organic sugar
3 large eggs
1 cup canned pure pumpkin (NOT pumpkin pie filling)
1 teaspoon vanilla extract
1/3 cup coconut milk (from the dairy case, not canned)
3/4 cup plus 1/2 cup bittersweet chocolate chips
3/4 cup chopped toasted walnuts
1 teaspoon extra virgin olive oil

Preheat oven to 350 degrees. Coat a 9x9 square non-stick baking pan with cooking spray. Set aside.

In a large bowl, whisk together the flours, baking powder, baking soda and salt. Set aside

Cream together butter and sugar in a mixer. Beat in the eggs one at a time. Add pumpkin and vanilla and mix until smooth. Mix in 1/3 of flour mixture. Beat in 1/2 of the milk. Repeat with remaining flour mixture and milk until just smooth. (Do not over-mix). Stir in 3/4 cup chocolate chips and walnuts.

Pour into prepared pan and bake in preheated oven for 35-40 minutes, or until top is golden brown and a cake tester inserted into the center of pan comes out clean. Remove from oven and allow to cool on wire rack for 20 minutes. Run a knife around side of the pan, turn out onto the rack, and allow to cool.

Cut cake into bars. Place remaining 1/2 chocolate chips and olive oil in a microwave safe bowl. Microwave for 20 seconds. Remove and stir. Continue heating in 10-second intervals until chocolate sauce is thin and runny. Place bars on serving platter and drizzle chocolate sauce over the top.

Bars can be made 2 days ahead. Store in plastic containers until ready to serve.

Ice Cream Sandwiches With Frozen Yogurt.


I first posted this recipe on my Napa Farmhouse 1885 blog back in 2011. The frozen dessert was featured in a special issue of the now defunct magazine Everyday Food. Back then, gluten free recipes were just starting to become popular. Since then, I have made the delicious almond flour cookies numerous times and served then with everything from fresh fruit and caramel dipping sauce to a side for pudding. But my favorite way is filled with frozen yogurt. Of course, you can use the more traditional ice-cream, but the frozen yogurt just sounds healthier, right?



Ice Cream Sandwiches scream summer to me. Honestly, they can be made year round but when the weather is hot, and the sun is shining, nothing is more cooling and refreshing than this dessert. Even better, the cookies are a snap to make and, once they are baked, the recipe is as simple as spooning best quality frozen yogurt between two cookies, sandwiching them together and eating. For a more indulgent dessert, dip half the cookie into caramel or chocolate sauce and serve. Enjoy!


Ice Cream Sandwiches With Frozen Yogurt
(From Everyday Food)
(makes 12 sandwiches)

For the almond shortbread cookies:
1/2 cup almond meal flour
1/2 cup plus 2 tablespoons brown rice flour. plus more for rolling
3 tablespoons cornstarch
2 tablespoons tapioca starch
1/4 tsp sea salt
1/4 cup (1/2 stick) unsalted butter, room temperature (**I used vegan butter, earth balance brand)
1/2 cup granulated sugar (I used 1/3 cup organic coconut sugar)
1 tsp pure vanilla extract
1 large egg yolk

For the yogurt:
Purchase a best-quality frozen yogurt in the flavor(s) of your choice.  I made 1/2 of this recipe with chocolate frozen yogurt and 1/2 with black cherry.
chocolate or caramel sauce if desired.

Directions for the cookies:
In a medium bowl, whisk together flours, starches, and salt.  In a large bowl, using an electric mixer, beat butter and granulated sugar on high until pale and fluffy, about 3 minutes.  Add vanilla and egg yolk and beat until combined, scraping down the bowl as needed, 1 minute.  With the mixer on low, gradually add flour mixture and beat until dough comes together (dough will be sticky).  Form dough into a disk, wrap tightly in plastic, and refrigerate 2 hours.

Preheat oven to 350 degrees.  On a lightly floured work surface, roll out dough to a 1/4-inch-thick round.  With a 2 1/2 inch fluted cookie cutter (or any shape you like) cut dough into 24 rounds and place on two parchment-lined rimmed baking sheets (reroll scraps if necessary).  Freeze 15 minutes, and then bake until cookies are lightly golden, 10 to 12 minutes.  Let cool completely on sheets on wire racks, 20 minutes. (to store, transfer to an airtight container at room temperature, up to 3 days)  To serve, transfer frozen yogurt to the refrigerator to soften, 20 minutes. Scoop 1/4 cup of the frozen yogurt onto flat sides of 12 cookies and sandwich with remaining cookies. Serve immediately.  If desired, dip into chocolate or caramel sauce, set on a waxed paper lined cookie sheet for 2 minutes in the refrigerator to harden and then serve.
